HORSERADISH – HERB
OF THE YEAR
Who says its Herb of the
Year? The International Herb Association has proclaimed
horseradish the Herb of the Year. Herb of the Year aims to
educate and promote a specific herb.
The Flavor of
horseradish is exceedingly pungent and “apt to run up the
nose”. This accounts for one of its folk names “Sting
Nose”. This herb was well known to the Egyptians by 1500
B.C. Early Europeans used horseradish as a medicine. The
root was rubbed on sore joints to relieve rheumatism and
pressed upon foreheads to relieve headaches. By the
Renaissance, it was used as a savory meat relish in Germany.
Growing Horseradish
A hardy perennial
growing in Zone 5. It will grow in almost any soil in a
sunny location. Because horseradish is a cold weather herb,
fall is the time for the greatest growth and peak time to
harvest. Roots can be left in the garden year-round and dug
when needed they can be dug in late fall, kept in a cold
place and re-planted in the spring. Allow plenty of space,
because plants get 2 1/2 “ – 3 feet tall and as wide. The
white spikes are edible with a mild flavor.
Horseradish
in the Kitchen
Early, tender
horseradish leaves have a pleasant flavor with just a touch
of pungency and can be added to salads. The grated root
enlivens soups, sauces and when added to mayonnaise and
mustards. Use in coleslaw, potato salad on sandwiches and
seafood.
To process horseradish
roots, wash off dir, remover the tough outer skin with a
paring knife. Cut root in cubes and process in a blender or
food processor. Be sure the kitchen is adequately
ventilated, when removing the top of the blender or food
processor, do not inhale the fumes. Adding vinegar or lemon
juice will lessen the potency. Mix about 1/4th
to 1/3rd cup of vinegar (rice, wine or cider) to
every 2 cups fresh ground horseradish. Pack in sterilized
jars, seal and refrigerate. Good for 3 months.
P.S. If you have a cold
and blocked sinuses. Put about 1/4th tsp in your
mouth for a minute of two.
This will clear your sinuses and help break up the mucus.
